What a crock!

For those of you itching to get started on making pickles, the crock that I use can be bought- in a variety of sizes- through
Amazon. They have the best prices, and you'll all be pleased to know they've come down since I bought mine. Depending on the size of your family and your rate of consumption, you may want to get a larger one; packed very tightly, you can expect about 4 liters (about 4 quarts) of kimchi or sauerkraut from the 5-liter size. It takes 1-2 weeks for most things to ferment adequately, depending on temperature. Try to keep your crock in a place that maintains around 65˚ F for best results.
